Meat and cold cuts

Intro

The Belgian Blue (or Triple B as it is known in the United States) is the undisputed champion of Belgian cattle. Rich in fine cuts and low in fat, the beef from these animals is appreciated by butchers and gourmets alike well beyond our borders. Walloon pork is amongst the best known on the world market with 2 prestigious breeds: the Landrace and the Piétrain. In all this, we should not overlook farm-reared poultry, or exquisite cold meats... Bon appétit!

Pork and other delicacies...

Although Walloon pork in general enjoys a high reputation abroad for quality, two star breeds stand out : Landrace and Piétrain, nicknamed « the pig with 4 hams », a particularly eloquent compliment from the mouth of a gourmet (or a butcher). These 2 breeds have long been in the European Superior category (Classification S - Seurop). Since 1998, Walloon pork has carried an identity label. The Walloon pork sector (the Filière Porcine Wallonne - FPW) jealously guards the quality of our future roasts, sausages and hams.

Walloon cold meats: a gourmand tradition

Produced in a ham region par excellence, the marvellous Jambon d'Ardenne has benefited since 1996 from the label « indication géographique contrôlée » (IGP européenne). Raw, salted, matured and smoked according to tradition - and in the Ardennes - it well deserves its recognition. Connoisseurs prefer it on the bone, less salty and more flavourful. Ardennes sausage, with or without garlic, « hure » (pig's head, truffles, pistachios and gherkins), white, black and even grey puddings, sausages with shallots, fresh sausages, a thousand and one regional patés... there are so many Walloon delicacies with an irresistible character and taste.
