Today, the Chimay Brewery exports to 55 countries and the cheese dairy to over 10.
The Chimay Brewery brews 4 beers : The “Blue Cap” (dark beer, 9°, which represents over 50 % of the volumes produced); the “Red Cap” (amber beer, 7°, the original Chimay), the “Triple” (strong blond beer, 8°) and the “Gold” (blond beer, 4.8°, a beer previously reserved for the monastic community, its guests and its employees). In 2015, the “Chimay Blue” aged in oak barrels was launched in limited quantities.
The basic cheese range includes 4 cheeses : the “Grand Chimay”, “Chimay Rouge” (washed in Trappist Red Cap beer), “Vieux” (made from pasture milk matured for over 12 months in our cellars) and “Poteaupré”. In addition to that, there is also a seasonal range which is constantly changing but includes the “À la Chimay Bleue” (washed in Trappist Blue Cap beer), the “Chimay Hiver” and the “Chimay Primeur”.
The 'Authentic Trappist Product' logo certifies that the products have been produced in the immediate vicinity of an abbey (the beer still always within) under the control of the monastic community and that most of the income is intended for social projects.
Chimay cheeses are made using milk that comes exclusively from local producers.
The Notre-Dame de Scourmont Abbey dates back to 1850. A group of 17 Trappist monks from Westvleteren began to clear land given to them by the Prince of Chimay. In 1862 the Chimay Brewery was created, followed in 1876 by the cheese dairy.
